It’s the third week of our VI Bake-Off! This treat in the office this week combines both cake and pastry!
It was Natasha’s turn to bake for the office on our third week of the VI Bake-Off. She decided to unite two different aspects of baked goods, pastry and cake, in order to create some delicious Bakewell Slices. As someone who is used to making simple cupcakes with a bit of butter-icing on, Natasha was made to be fairly out of her comfort zone by making her own pastry by hand for the first time.
The bake consisted of almond sponge cake placed on top of a Pâte Sucrée pastry base, with raspberry jam sandwiched in the middle, topped with drizzled dark chocolate and a Glacé cherry.

The VI Bake-Off is not only a great excuse to challenge the team and eat cake, but is also a fun way of preparing for baking for the Macmillan Coffee Morning we’re holding on September the 25th (with the help from everyone at Dock).
